{"id":22603,"date":"2015-02-11T11:46:58","date_gmt":"2015-02-11T11:46:58","guid":{"rendered":"https:\/\/www.clearbooks.co.uk\/?p=22603"},"modified":"2018-08-15T17:08:38","modified_gmt":"2018-08-15T16:08:38","slug":"recipe-of-the-month-february","status":"publish","type":"post","link":"https:\/\/www.clearbooks.co.uk\/blog\/recipe-of-the-month-february\/","title":{"rendered":"Recipe of the month: February"},"content":{"rendered":"<p>In our second \u2018recipe of the month\u2019, our onboarding team leader Mike shares his favourite meal, a hearty three bean stew which will definitely keep you going until spring finally comes!<\/p>\n<h3><strong>Three Bean Stew<\/strong><\/h3>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 x leek sliced<\/li>\n<li>2 x carrots sliced<\/li>\n<li>2 x medium onions diced<\/li>\n<li>2 x peppers (red and yellow) roughly chopped<\/li>\n<li>3 x cloves of garlic chopped<\/li>\n<li>1 x chilli chopped and deseeded<\/li>\n<li>a handful of green beans<\/li>\n<li>1 x 400g tin of chopped tomatoes<\/li>\n<li>1 x 400g tin of butter beans<\/li>\n<li>1 x 400g tin of kidney beans<\/li>\n<li>a couple of handfuls of spinach (optional)<\/li>\n<li>olive oil<\/li>\n<li>salt<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ul>\n<li>Fry the onions in the oil on a medium heat in a large pan until they\u2019re browned<\/li>\n<li>Add the chilli and garlic and fry for a couple more minutes<\/li>\n<li>Add the rest of the veg and cook until softened (around 10 minutes)<\/li>\n<li>Pour in the tomatoes and (drained) beans and simmer on a low heat for a further 30 minutes<\/li>\n<li>Season with salt and if you want to add a bit of colour stir in some spinach right at the end<\/li>\n<li>Serve alone or with rice (remember one cup of rice to two cups of water when boiling!) and a spoonful of Greek yoghurt<\/li>\n<\/ul>\n<p>Let us know if you try it!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>In our second \u2018recipe of the month\u2019, our onboarding team leader Mike shares his favourite meal, a hearty three bean stew which will definitely keep you going until spring finally comes!
