In our second ‘recipe of the month’, our onboarding team leader Mike shares his favourite meal, a hearty three bean stew which will definitely keep you going until spring finally comes!

Three Bean Stew

Ingredients:

  • 1 x leek sliced
  • 2 x carrots sliced
  • 2 x medium onions diced
  • 2 x peppers (red and yellow) roughly chopped
  • 3 x cloves of garlic chopped
  • 1 x chilli chopped and deseeded
  • a handful of green beans
  • 1 x 400g tin of chopped tomatoes
  • 1 x 400g tin of butter beans
  • 1 x 400g tin of kidney beans
  • a couple of handfuls of spinach (optional)
  • olive oil
  • salt

Instructions:

  • Fry the onions in the oil on a medium heat in a large pan until they’re browned
  • Add the chilli and garlic and fry for a couple more minutes
  • Add the rest of the veg and cook until softened (around 10 minutes)
  • Pour in the tomatoes and (drained) beans and simmer on a low heat for a further 30 minutes
  • Season with salt and if you want to add a bit of colour stir in some spinach right at the end
  • Serve alone or with rice (remember one cup of rice to two cups of water when boiling!) and a spoonful of Greek yoghurt
